Italian orecchia ‘ear’, Italian ad -etta ‘small’) are a pasta typical of Puglia Apulia, a region of the southeastern region of Italy that forms the heel of Italy’s boot. Their name comes from their shape, which resembles a small ear. These noodles are an Italian inspired pasta coming from a long time family friend Chef Gisella Isidori.
Orecchiette translates to ‘little ears’ but despite the weird meaning, this pasta is one of the best. Although it originated in the early 12th century, this type of pasta remains popular to this day.

For Authentic "al dente" pasta, lightly salt pot of water and bring to a boil. Add pasta and stir occasionally. Test after 9 minutes for desired tenderness. If needed allow one more minute of cooking. Pasta should have a slight firmness when bitten.
