Casereccio, which means “homemade“ are short twists of pasta originating from Sicily which appear rolled up on themselves. Casarecci pairs well with cream/cheese, meat, napolitana, seafood, pesto and vegetables. These noodles are an Italian inspired pasta coming from a long time family friend Chef Gisella Isidori.
It is also a very popular pasta in other regions of Southern Italy. Therefore, the best sauces to serve with it are those of traditional Southern Italian origin with typically Mediterranean ingredients such as eggplant, tomatoes, cheese, and basil. This pasta is also often served with seafood or fish, such as swordfish.

For Authentic "al dente" pasta, lightly salt pot of water and bring to a boil. Add pasta and stir occasionally. Test after 9 minutes for desired tenderness. If needed allow one more minute of cooking. Pasta should have a slight firmness when bitten.

We were introduced to the Dorothy Lynch dressing on a visit to old friends in Iowa. When we got back to Florida it's hard to find, so, for a while we found it on Amazon. We'll, I checked it out online and found I could get it directly from the maker at a better price! Now it's the only salad dressing I use! It's the best I've ever eaten!
We discovered the dressing when we lived in Lincoln. When we moved to New York, we were not sure if we could get new bottles. But we found that we could and we have been ordering it every time we run out. Keep on making it.
