Lemon Basil Pasta Salad | Perfect Summer Salad | Easy To Make | Light & Refreshing | A Family Favorite

This pasta salad is ideal for a refreshing, light summertime lunch, potluck salad, or as an easy side dish with your favorite barbeque meal. Kids love it, adults love it everyone loves it. If you want a side dish that is a more heavy and filling, add your favorite protein source such as chicken or tuna! What do you say, let's get cookin'!

Who is Simply Sunflower? 

Simply Sunflower was born as a result of Farmer Al striving to be a better steward of the environment. He began using sunflowers as a renewable energy source on their farm and ranch near Ord, Nebraska. His property and farming business has been in the Koelling family for the past 120 years! The soil is rich in history and heritage and the family has always been filled with pioneers and innovators.


Who is Sabbiatos?


Sabbiatos Artisanal Pasta is based out of Mullen, Nebraska. This pasta is made by a ranching family from a recipe a friend gave them. Her name is Chef Gisella Isidori from Italy itself! She is pictured above on the right along with Deb Cox, but it's really a whole family affair. Their family hopes to share their love for pasta with every rich flavor, and different type of pasta they have created. These pastas are the real deal! Hand made with Italian roots, and locally sourced! 



Ingredients : 

  • 1/2 package of Sabbiatos pasta of your choice 
  • 1/3 cup Simply Sunflower Oil 
  • 1/3 cup mayonnaise
  • 2 medium lemons zested and juiced 
  • 1 Tablespoon lemon pepper seasoning
  • 2/3 cups freshly shredded Parmesan cheese (plus more for garnish) 
  • 1/2 cup chiffonade fresh basil leaves (plus more for garnish) 

Instructions : 

  1. Cook Sabbiatos pasta al dente (reserve 1/4 cup of pasta water from the pot before draining). 
  2. While the Sabbiatos noodles are boiling, prepare the sauce by combining Simply Sunflower Oil, mayonnaise, lemon juice, lemon zest, salt, and lemon pepper seasoning. 
  3. Toss Sabbiatos pasta noodles with the sauce, reserved pasta water, Parmesan and basil. 
  4. Refrigerate for several hours. 
  5. Top with extra Parmesan cheese and basil if desired before serving.
